The greens of the turnip are often tossed, but they are perfectly edible and delicious!
When buying turnips, look for leaves that are bright green and fresh.
To prepare Turnip greens, remove the central stalk with a paring knife or with your hands and give them a thorough wash. Chop into the desired size.
You can replace Turnip greens in any recipe that calls for “Collard Greens” or “Southern Greens.” just note that turnip greens are slightly sweeter and will cook more quickly
