The term “Spring greens” can be confusing: it is broadly used to designate green leafy vegetables that are available in the spring, but in the UK it also refers specifically to the first cabbages of the year.
When buying, look for leaves that are bright green, with no wilting nor blemishes.
To prepare, tear the leaves from the bunch. If the stalks are large, remove them with a knife or by tearing the side of the leaves. Chop according to desired shape and give them a good wash before cooking.
