Romanesco (also known as Romanesco Broccoli or Romanesco Cauliflower) can be used interchangeably with Cauliflower, although its flavour is slightly milder, sweeter and nuttier.
When buying, look for Romanesco that feels heavy for its size, with firm, compact leaves and bright green florets with no blemishes.
To prepare, wash the Romanesco and remove the browning end of the stem.
Food waste tip: Romanesco leaves and stems are perfectly edible so don’t discard them - leaves are delicious roasted and stems are wonderful in soups and stews.
