Tips:
Purple Potatoes tend to be of the “waxy” (as opposed to “floury” variety). Waxy potatoes tend to be lower in starch content and higher in water content, so they hold their shape well.
Purple potatoes include many heirloom and conventional varieties such as Purple Peruvian, All Blue, Congo, Vitilette, and Purple Majesty.
Purple potatoes are not to be confused with Purple sweet potatoes, which can be used interchangeably with orange sweet potatoes.
When buying, look for potatoes that are smooth and firm with few blemishes and no green spuds.
