Tips:

  • We tend to eat olives as snacks, but they can bring depth of flavour, fatty richness and a salty counterpart to many dishes, so keep some handy in the fridge.

  • To remove the pit, place an olive on a chopping board. Using a heavy duty knife with the blade facing away from your body, carefully press down using the flat side of the knife.

  • The colour of an olive indicates its ripeness: the darker it is, the riper it was when it was harvested.
