Tips:
Potatoes can be either “waxy” or “floury” depending on the variety. Waxy potatoes tend to be lower in starch content and higher in water content, so they hold their shape well. Floury potatoes have a high starch content which makes them fluffy, so they are great baked or fried.
Waxy varieties include: Charlotte, Nadine, Anya, Nicola, Pink Eye (Southern Gold), Cornish Kings, Charlotte, Maris Peer, Jersey Royals, Cara, Harmony.
Floury varieties: Yukon Gold, Maris Piper, King Edward, Mayan Gold, Pentland dell, Vivaldi, Golden Wonder, Fianna.
When buying, look for potatoes that are smooth and firm with few blemishes and no green spuds.
