Tips:
Lentils are a legume that comes in many varieties, most commonly referred to as Red, Green, Black and Yellow.
Lentils can be classified according to their size, whether they are split or whole and shelled or unshelled.
Split and/or shelled Lentils will tend to cook more quickly and turn mushy rather than hold their shape.
Before cooking, wash thoroughly and check for stones, debris or spoiled lentils.
To speed up the cooking process, pre-soak lentils for a few hours.
