Tips:
This knobbly vegetable can look scary, but fear not! Slice top and bottom and unabashedly remove the tough outer skin with a knife or hefty peeler to reveal the marbled white flesh.
The celeriac’s white flesh discolours quickly, so place it in a water bath with a squeeze of lemon once it’s cleaned.
Food waste tip: Use the celeriac leaves and stems in soups and stews, they are absolutely delicious when cooked.
