Tips:

  • When buying, select a smaller vibrant yellow marrow, as these will be sweeter, milder and less watery than the larger ones.

  • To prepare the marrow, give it a good wash and slice it lengthwise. Remove the stringy core and seeds. If roasting whole leave the skin on, otherwise peel it with a large peeler or a sharp knife.
