Tips:
When buying, looking for beetroot that is firm but not hard to the touch with fresh green stalks.
Beetroot releases a beautifully rich colour when sliced, so make sure to wear an apron and keep away from other ingredients in prep (unless you are happy with everything turning pink!).
Food waste tip: Hold onto those beetroot leaves. They can be eaten sautéed or made into a vibrant pesto.
