Tips:

  • The term “Spring greens” can be confusing: it is broadly used to designate green leafy vegetables that are available in the spring, but in the UK it also refers specifically to the first cabbages of the year.

  • When buying, look for leaves that are bright green, with no wilting nor blemishes.

  • To prepare, tear the leaves from the bunch. If the stalks are large, remove them with a knife or by tearing the side of the leaves. Chop according to desired shape and give them a good wash before cooking.
