Tips:

  • Romanesco (also known as Romanesco Broccoli or Romanesco Cauliflower) can be used interchangeably with Cauliflower, although its flavour is slightly milder, sweeter and nuttier.

  • When buying, look for Romanesco that feels heavy for its size, with firm, compact leaves and bright green florets with no blemishes.

  • To prepare, wash the Romanesco and remove the browning end of the stem.

  • Food waste tip: Romanesco leaves and stems are perfectly edible so don’t discard them - leaves are delicious roasted and stems are wonderful in soups and stews.
