Tips:

  • Green, yellow and black plantains are just the same fruit in different stages of its maturation, with green plantains being the youngest and black the oldest.

  • The darker the plantain, the higher the sugar content and sweeter the flavour.

  • Do not use plantains interchangeably if a recipe calls for a specific type, as cooking methods and times will differ vastly.

  • To prepare a plantain, remove both ends with a knife and score the fruit length-wise. Use a butter knife to remove the skin from the green plantain if needed, the skin on yellow and black plantains should come off more easily.
