Tips:

  • Cassava - also known as Yuca - has a hard exterior, so look for one with smooth clear skin to make peeling easier.

  • The veg changes colour very quickly once cut, so place it in a bowl with water and lemon until ready to use.

  • Cassava has a tough core much like pineapple, so remove the woody core and discard it before cooking.

  • Some Cassava varieties contain cyanogenic glucosides which are toxic, so never eat the tuber raw.
