Tips:

  • When buying, look for firm and smooth butternut squash that feels heavy for its size.

  • When preparing butternut squash, make sure you are on a surface that is not slippery - use a tea towel to sturdy your chopping board if needed.

  • To prepare the squash, use a heavy duty knife and cut across the center (to separate the bulb from the neck) and then length-wise. Use a heavy duty peeler and remove the skin. Carve the seeds out with a spoon and set to the side.

  • Food waste tip: Separate the seeds from the pulp, then rinse and dry. The seeds can be tossed in oil and spices and easily baked to make a crunchy snack.
