Tips:

  • When buying, looking for beetroot that is firm but not hard to the touch with fresh green stalks.

  • Beetroot releases a beautifully rich colour when sliced, so make sure to wear an apron and keep away from other ingredients in prep (unless you are happy with everything turning pink!).

  • Food waste tip: Hold onto those beetroot leaves. They can be eaten sautéed or made into a vibrant pesto.
