Tips:

  • If you purchase canned bamboo shoots in water or brine, make sure to rinse them before adding to recipes.

  • Young bamboo shoots are very mild so they will take on stronger flavours, making them a great textural element in stir-fries and soups.

  • If you are lucky enough to score some fresh bamboo shoots, make sure to cook them thoroughly (boil and then soak), as raw bamboo contains strong toxins that release cyanide when digested.
